Purselane, purselane, purselane--in salad, steamed, in a casserole and sauteed with onion, garlic, tomato and green chili, this 'weed' is a great source of Omega 3's, and was the star of our "Weeds, if You Can't Beat 'Em, Eat 'Em" potluck. Our delightful host Mackenzie Shannon led us on an informative 'tour de weeds' where our 'sustainable living toolkit' got a great addition--free, nutritious food in the often overlooked 'weed.' ,Vegetarian Stew a monthly presentation on community radio station KAFM 88.1,
in June offered an interview with VSC member Mary Romano covering the
'Reinventing the Meal' event held in Denver for Earth Day, also discussing
'Earth Literacy.' July's topic was 'easy tips for eating more healthfully.' Veg
Stew airs monthly on the second Thurs. at 12:30 p.m., tune in for a chance at

Garden Deli serves mostly organic, all vegetarian dishes, some made with recipes
